In 1987 Moet et Chandon purchased a 120 hectare property on the Yarra
River at Coldstream, in the heart of the Yarra Valley. At the moment 50 hectares of
vineyards have been planted with the traditional Champagne varieties, Chardonnay (50%),
Pinot Noir (45%) and Pinot Meunier (5%). Wine making process The grapes are fed directly into the presses and the juices are separated into Cuv�e, Premi�r Taille and Deuxi�me Taille. 2eme Taille is not used in any of the Green Point blends. The juices are settled in stainless steel tanks and then fermentation commences to produce the base wines. In July of each year the winemakers along with one of the senior blenders from Moet blend the various Cuv�es. These are then tiraged between August and October and matured on yeast for 2 to 5 years before disgorging, cork ageing and release. This delightful ros� was made from 60% Pinot Noir and 40% Chardonnay with 9% of the Pinot being fermented on its skins. It has a beautiful creamy palate followed by a long complex firm finish.
